For the Caramel
  • 1 cup Medjool Dates Pitted
  • 1/2 cup Creamy Almond Butter Can substitute with sunflower seed butter
  • 2 tbsp Coconut Oil Melted
For the Chocolate Coating
  • 1 cup Chocolate Chips Dairy-free

Method
 

Step-by-Step Instructions
  1. Soak the Dates: Place the pitted Medjool dates in a bowl and cover with very hot water. Let them soak for about 10 minutes.
  2. Blend the Mixture: Transfer the soaked dates to a food processor along with the almond butter and melted coconut oil. Blend until smooth.
  3. Mold the Caramels: Line a loaf pan with parchment paper and pour the blended mixture into the pan. Spread it evenly and press down. Freeze for 2-3 hours.
  4. Slice the Caramels: Remove the hardened mixture from the loaf pan and slice into 12 equal squares.
  5. Melt the Chocolate: Melt the chocolate chips with a bit of coconut oil in the microwave or double boiler until smooth.
  6. Coat the Caramels: Dip each square into the melted chocolate and let excess chocolate drip off.
  7. Chill Until Firm: Place the coated caramels in the refrigerator for about 1 hour until the chocolate hardens.
