- Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into muffin liners and refrigerate for 15 minutes.
- Whisk together flour, brown sugar, oats, and salt. Mix in melted butter until crumbly.
- Peel and dice apples, mix with lemon juice and a sprinkle of cinnamon.
- Beat cream cheese, sugar, flour, and vanilla until smooth. Add egg and mix until incorporated.
- Layer cheesecake batter into muffin compartments and add apple filling on top. Sprinkle streusel over each.
- Bake at 325°F (160°C) for 28-30 minutes until set. Cool at room temperature for 30 minutes, then refrigerate for at least 2 hours.
- Serve chilled, optionally drizzled with caramel sauce and garnished with whipped cream.
