Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C).
  2. In a large skillet over medium heat, cook about 8 slices of thick-cut bacon until it’s crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain excess fat and crumble into small pieces.
  3. In a mixing bowl, crack 8 large eggs and add 1 cup of whole milk, 1 teaspoon of salt, 1 teaspoon of pepper, and 1 teaspoon of garlic powder. Whisk thoroughly until blended.
  4. Grease a 9x13-inch baking dish and spread a 32-ounce bag of frozen tater tots across the bottom.
  5. Sprinkle crumbled bacon and ¼ cup of chopped green onions over the tater tots.
  6. Pour the egg mixture over the layered tater tots, bacon, and green onions.
  7. Sprinkle 2 cups of shredded colby jack cheese over the top.
