Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Dice the red bell pepper, slice the red onion, and mince the garlic. Cut the tomatoes in half.
  3. In a small bowl, combine the oregano, thyme, black pepper, and red pepper flakes. Stir together until evenly mixed.
  4. Distribute the chopped vegetables evenly in your baking dish. Crumble the feta cheese on top.
  5. Pour a drizzle of olive oil over the mixture and sprinkle with the herb blend.
  6. Bake in the preheated oven for 25 minutes.
  7. Stir in the wilted spinach until it begins to collapse.
  8. Create small wells in the mixture and crack the eggs into these wells.
  9. Sprinkle lemon zest over the top and return to the oven for 8-10 minutes.
  10. Let it rest for 2 minutes, garnish with fresh basil, and serve hot.
