  • 1 teaspoon Oregano fresh preferred
  • 1 teaspoon Cumin
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Pepper to taste
  • 1 tablespoon Olive Oil or neutral oil
  • 1 large Egg or flax egg for vegan
For the Tzatziki
  • 1 cup Greek Yogurt or dairy-free yogurt
  • 1 medium Cucumber squeezed dry
  • 1 tablespoon Lemon Juice fresh

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mash the cooked green lentils in a large bowl until textured but cohesive.
  3. Mix in breadcrumbs, onion, garlic, parsley, dill, oregano, cumin, salt, pepper, olive oil, and the egg thoroughly.
  4. Form the mixture into meatballs about 1 to 1.5 inches in diameter and place on the baking sheet.
  5. Bake for 20-25 minutes, turning halfway for an even color.
  6. Prepare the tzatziki sauce by whisking together yogurt, cucumber, garlic, lemon juice, olive oil, and a pinch of salt.
  7. Serve the meatballs with tzatziki, garnished with lemon wedges and cucumber slices.
