  • 1 cup Light Brown Sugar Substitution: Granulated sugar may be used instead.
  • 1 teaspoon Baking Powder
  • 1 cup Pistachios (shelled and unsalted) Substitution: Almonds, walnuts, or pecans can be used for different flavors.
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Equipment

  • Mixing bowl
  • pastry cutter
  • 9x13 baking pan
  • Saucepan

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt. Cut in the cold, cubed butter until it resembles coarse crumbs. Add the egg yolk and a splash of ice water; mix until a dough forms. Press into a greased 9x13 baking pan and pre-bake for 15-20 minutes until golden brown.
  3. In a saucepan over medium heat, combine the fresh blackberries and sugar, stirring occasionally for about 5-7 minutes until they release their juices. Stir in the lemon juice and cornstarch, and let thicken for another 1-2 minutes. Remove from heat to cool slightly.
  4. In a new bowl, combine the light brown sugar, baking powder, and flour for the topping. Cut in the cold butter until it resembles coarse crumbs. Add the egg and vanilla extract, mixing until combined, then fold in chopped pistachios.
  5. Spread the berry filling evenly over the crust. Sprinkle the pistachio topping over, pressing down gently. Bake for 30-35 minutes until the top is golden and bubbly.
  6. Allow the bars to cool completely in the pan for 1-2 hours, then cut into squares and enjoy!
