Preparation Steps
- Combine 1 cup of rolled oats, 1 cup of non-dairy milk, and ½ cup of coconut yogurt in a large mixing bowl. Add 2 tablespoons of chia seeds and mix until combined.
- Drizzle in 2 tablespoons of maple syrup, add lemon zest and juice, and 1 teaspoon of vanilla extract. Mix thoroughly.
- Cover the mixture and refrigerate for at least 4 hours or overnight.
- Prepare the blueberry compote by combining 1 cup of blueberries, 1 tablespoon of chia seeds, 2 tablespoons of maple syrup, lemon juice, and a splash of vanilla in a saucepan. Cook on low for about 10 minutes.
- Once the oats are ready, give the mixture a good stir, and spoon it into serving bowls. Top with blueberry compote.
- Finish with a sprinkle of granola and serve immediately, optionally adding more blueberries or yogurt.
