  • 1 cup Almond/Coconut/Cashew Milk Any non-dairy milk can be used.
  • ½ cup Coconut Yogurt Plant-based yogurt can be substituted.
  • 2 tablespoons Chia Seeds Optional but recommended for texture.
Blueberry Compote
  • 1 cup Fresh Blueberries Can substitute with seasonal berries.
  • 2 tablespoons Pure Maple Syrup/Raw Honey/Rice Malt Syrup Ripe banana can be used as a sweetener.
  • ½ unit Lemon Zest and Juice Lime can substitute if needed.
  • 1 teaspoon Vanilla Extract Optional for added flavor.
Crunch
  • ½ cup Granola Use your favorite blend or omit.

Method
 

Preparation Steps
  1. Combine 1 cup of rolled oats, 1 cup of non-dairy milk, and ½ cup of coconut yogurt in a large mixing bowl. Add 2 tablespoons of chia seeds and mix until combined.
  2. Drizzle in 2 tablespoons of maple syrup, add lemon zest and juice, and 1 teaspoon of vanilla extract. Mix thoroughly.
  3. Cover the mixture and refrigerate for at least 4 hours or overnight.
  4. Prepare the blueberry compote by combining 1 cup of blueberries, 1 tablespoon of chia seeds, 2 tablespoons of maple syrup, lemon juice, and a splash of vanilla in a saucepan. Cook on low for about 10 minutes.
  5. Once the oats are ready, give the mixture a good stir, and spoon it into serving bowls. Top with blueberry compote.
  6. Finish with a sprinkle of granola and serve immediately, optionally adding more blueberries or yogurt.
