  • 1/2 cup Feta Cheese Crumbled; goat cheese can be used for a different flavor.

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the minced shallot, minced garlic, red wine vinegar, freshly squeezed lemon juice, lemon zest, Dijon mustard, salt, black pepper, and chile flakes. Allow to rest for 2-3 minutes.
  2. While whisking, slowly drizzle in the olive oil until well combined and slightly thickened.
  3. Add the rinsed white beans, chopped parsley, and sliced chives to the vinaigrette. Gently toss to coat the beans.
  4. Carefully fold in the crumbled feta cheese.
  5. Taste and adjust seasoning as necessary. Serve immediately or let it sit for a few minutes.
