- Husk the fresh corn and remove all silk strands. If using frozen corn, thaw it completely.
- Bring a large pot of water to a rolling boil.
- Add the fresh corn to the boiling water and cook for 5 to 7 minutes until tender.
- Remove the corn and plunge it into cold water to stop the cooking process.
- Chop the cherry tomatoes in half and finely dice the red onion.
- In a large mixing bowl, combine the cooled corn, cherry tomatoes, red onion, and cilantro.
- Squeeze in the lime juice and season with salt and pepper.
- Gently stir all the ingredients together and adjust seasoning if needed.
