Ingredients
  

For the Salsa
  • 4 ears Fresh Corn or frozen corn
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Red Onion finely diced
  • 1 small Jalapeño finely chopped, adjust based on spice preference
  • 2 tablespoons Lime Juice freshly squeezed
  • 1/4 cup Cilantro chopped
  • to taste Salt
  • to taste Pepper
Optional Add-Ins
  • 1 avocado Diced Avocado
  • 1 cup Black Beans canned, rinsed, and drained
  • Additional Herbs like basil for unique flavor

Method
 

Preparation Steps
  1. Husk the fresh corn and remove all silk strands. If using frozen corn, thaw it completely.
  2. Bring a large pot of water to a rolling boil.
  3. Add the fresh corn to the boiling water and cook for 5 to 7 minutes until tender.
  4. Remove the corn and plunge it into cold water to stop the cooking process.
  5. Chop the cherry tomatoes in half and finely dice the red onion.
  6. In a large mixing bowl, combine the cooled corn, cherry tomatoes, red onion, and cilantro.
  7. Squeeze in the lime juice and season with salt and pepper.
  8. Gently stir all the ingredients together and adjust seasoning if needed.
  9. Serve in a bowl, enjoy it with tortilla chips or as a side dish.
