  • 2 cloves Garlic Minced
  • 1/4 teaspoon Cayenne Pepper Optional
  • 1/4 cup Water Adjust consistency as needed
For the Base and Toppings
  • 2 cups Cooked Rice Or Cauliflower Rice
  • 1 can Black Beans Add fiber and protein
  • 1 cup Corn Kernels Fresh or frozen
  • 1/2 cup Chopped Red Onion
  • 1 cup Diced Tomatoes
  • 2 Lime Wedges For garnish
  • 4 tortillas Corn or Flour Tortillas For serving
  • 2 cups Shredded Lettuce

Step-by-Step Instructions
  1. Prepare the Salmon: Pat salmon fillets dry with paper towels. Combine Cajun seasoning, olive oil, and lemon juice in a bowl. Marinate the fillets for 15 to 30 minutes.
  2. Cook the Salmon: Heat a non-stick skillet over medium-high heat. Sear salmon skin-side down for 4-5 minutes, then flip and cook until opaque, about 3-4 minutes.
  3. Make Avocado Lime Crema: Blend avocados, sour cream (or Greek yogurt), lime juice, cilantro, minced garlic, and salt until smooth. Adjust consistency with water.
  4. Prepare the Base: Cook rice or cauliflower rice as per package instructions and warm tortillas if using.
  5. Assemble the Dish: Flake cooked salmon into pieces. Serve over rice or in tortillas. Top with avocado lime crema and desired toppings.
