- Preheat your oven to 375°F (190°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, milk, eggs, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix until just combined.
- Flatten your meat mixture into a rectangle on parchment paper, layer the ham and Swiss cheese, then roll tightly.
- Place the rolled meatloaf seam-side down into the loaf pan and press gently to seal.
- Bake for 45–55 minutes, checking the internal temperature should reach 165°F (74°C). Optionally brush with Dijon and mayonnaise during the last 10 minutes.
- Let the meatloaf rest for about 10 minutes before slicing.
