  • 1 cup Onion finely chopped
  • 3 cloves Garlic minced
  • 1/4 cup Fresh Parsley chopped, can substitute with cilantro
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Salt consider sea salt
  • 1/2 tsp Ground Black Pepper
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Greek yogurt for thicker texture
  • 2 tbsp Lemon Juice can substitute with vinegar
  • 1 tbsp Olive Oil or any neutral oil

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, chopped fresh parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly for about 3-5 minutes.
  2. Wet your hands and shape the mixture into small oval koftas, about the size of a golf ball, packing them tightly.
  3. Preheat your grill to medium-high heat (about 375°F or 190°C) and brush with olive oil to prevent sticking. Heat for about 5-7 minutes.
  4. Place the koftas on the hot grill and cook for 10-12 minutes, turning occasionally until golden brown and cooked through.
  5. In a small bowl, whisk together the plain yogurt, lemon juice, and a pinch of salt until smooth.
  6. Serve the grilled koftas warm on a platter alongside the garlic yogurt sauce for dipping.
