Marinating and Cooking
- Whisk together chili powder, lime juice, olive oil, garlic powder, and salt to create a marinade. Coat chicken thoroughly and marinate for at least 30 minutes or up to 8 hours.
- Preheat grill to medium-high heat (about 400°F). Grill chicken for 6-7 minutes per side until cooked through. Let it rest before slicing.
- While chicken rests, grill pineapple and other salsa ingredients for 5-7 minutes until caramelized. Chop and mix with lime juice and cilantro.
- Blend avocado, sour cream, lime juice, and salt until smooth for avocado crema.
- Warm corn tortillas on the grill for 30-40 seconds per side until pliable.
- Assemble by layering chicken, pineapple salsa, and drizzle avocado crema on each tortilla. Add cheese if desired.
