Ingredients
  

For the Chicken
  • 2 pieces Chicken Breasts or Thighs Thighs are juicier, breasts are leaner.
  • 2 tablespoons Chili Powder For flavor.
  • 2 tablespoons Lime Juice Freshly squeezed.
  • 1 tablespoon Olive Oil To keep chicken moist.
  • 1 teaspoon Garlic Powder For flavor.
  • 1 teaspoon Salt For seasoning.
For the Pineapple Salsa
  • 1 cup Fresh Pineapple Ripe and grilled.
  • 1 medium Red Bell Pepper Diced.
  • 1/2 medium Red Onion Diced.
  • 1 medium Jalapeño Diced, seeds removed for milder salsa.
  • 1 tablespoon Lime Juice For brightness.
  • 1/4 cup Cilantro Chopped.
For Assembly
  • 8 pieces Corn Tortillas Gluten-free option.
  • 1 cup Monterey Jack or Pepper Jack Cheese Optional.
  • 1 medium Avocado For avocado crema.
  • 1/2 cup Sour Cream For mixture with avocado.
  • Additional Toppings Such as shredded lettuce, diced tomatoes, or hot sauce.

Method
 

Marinating and Cooking
  1. Whisk together chili powder, lime juice, olive oil, garlic powder, and salt to create a marinade. Coat chicken thoroughly and marinate for at least 30 minutes or up to 8 hours.
  2. Preheat grill to medium-high heat (about 400°F). Grill chicken for 6-7 minutes per side until cooked through. Let it rest before slicing.
  3. While chicken rests, grill pineapple and other salsa ingredients for 5-7 minutes until caramelized. Chop and mix with lime juice and cilantro.
  4. Blend avocado, sour cream, lime juice, and salt until smooth for avocado crema.
  5. Warm corn tortillas on the grill for 30-40 seconds per side until pliable.
  6. Assemble by layering chicken, pineapple salsa, and drizzle avocado crema on each tortilla. Add cheese if desired.
