Step-by-Step Instructions
  1. Wash two large organic cucumbers under cold running water. Chop them into rough one-inch chunks; peeling is optional.
  2. In a blender, combine the chopped cucumbers, freshly squeezed juice of two limes, about 4 cups of cold water, and your choice of sweetener. Blend on high for 1-2 minutes until liquefied.
  3. Position a fine mesh sieve over a large bowl or pitcher and pour the blended mixture through it, using a spatula to extract as much liquid as possible.
  4. Taste the liquid and adjust the flavor by adding more lime juice or sweetener as necessary.
  5. Transfer the mixture into a pitcher and refrigerate for at least 30 minutes before serving. Serve over ice and garnish as desired.
