Step‑by‑Step Instructions for Philly Cheesesteak Quesadillas
  1. In a large skillet, heat 1 tablespoon of light olive oil over medium-high heat. Add thinly sliced beef, cooking until browned, about 5-7 minutes. Season with salt and pepper, then remove from skillet.
  2. In the same skillet, add another tablespoon of oil if needed, and sauté diced onions, red pepper, green pepper, and sliced mushrooms for 3-5 minutes. Add minced garlic in the final minute, then return beef to skillet.
  3. On one half of a flour tortilla, spread a thin layer of mayonnaise. On the other half, add the beef and vegetable mixture, followed by provolone cheese. Fold the tortilla over.
  4. In the skillet, add more oil and cook the folded quesadilla for 3-4 minutes on each side until crispy and cheese is melted.
  5. Remove from skillet, let sit briefly, slice into triangles, and serve hot with your favorite sauce.
