- In a large skillet, heat 1 tablespoon of light olive oil over medium-high heat. Add thinly sliced beef, cooking until browned, about 5-7 minutes. Season with salt and pepper, then remove from skillet.
- In the same skillet, add another tablespoon of oil if needed, and sauté diced onions, red pepper, green pepper, and sliced mushrooms for 3-5 minutes. Add minced garlic in the final minute, then return beef to skillet.
- On one half of a flour tortilla, spread a thin layer of mayonnaise. On the other half, add the beef and vegetable mixture, followed by provolone cheese. Fold the tortilla over.
