  • 1 cup Pumpkin Puree
  • 1 cup Flour
  • 1 cup Sugar For the batter
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1 pinch Salt
  • 1 large Egg
  • 1/2 cup Vegetable Oil
For Topping
  • 2 tbsp Sugar For dusting
  • 1 tsp Cinnamon

Method
 

Instructions
  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a mixing bowl, combine pumpkin puree, flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add the egg and vegetable oil to the dry ingredients and mix until just combined.
  4. Scoop the batter into the muffin tin, filling each cup about two-thirds full.
  5. In a small bowl, mix together the sugar and cinnamon for the topping.
  6. Sprinkle the cinnamon sugar mixture over the muffin batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow the muffins to cool in the pan for 10 minutes before transferring to a wire rack.
