  • 2 teaspoons Minced Fresh Thyme or 1 tsp dried thyme
  • Salt and Pepper to taste
  • 2 cups Shredded Rotisserie Chicken or shredded turkey/tofu for variation
  • 2 cups Frozen Mixed Vegetables or fresh vegetables adjusting cooking time
Topping
  • 1 sheet Frozen Puff Pastry or phyllo/biscuit dough alternatives
  • 1 tablespoon All-Purpose Flour for dusting
  • 1 Large Egg beaten, or milk for egg wash

Method
 

Preparation
  1. Preheat the oven to 400°F (205°C) and prepare a baking sheet with cooking spray.
  2. Melt butter in a skillet, add onion and celery, cooking for 5-6 minutes until tender. Stir in garlic.
  3. Whisk in flour, cooking for 1-2 minutes. Gradually add broth and cream, whisk until smooth.
  4. Season with thyme, salt, and pepper. Simmer for 10 minutes, then fold in chicken and vegetables.
  5. Transfer the mixture to the baking sheet, spreading evenly.
  6. Roll out the puff pastry and cut into strips. Lay over the filling in a lattice pattern.
  7. Brush the pastry with beaten egg.
  8. Bake for 35-40 minutes until golden brown and filling bubbles.
  9. Let cool for 10 minutes before serving.
