For the Chili
  • 1 tablespoon oil any cooking oil or butter works well
  • 14 ounces smoked poultry sausage substitute with kielbasa if desired
  • 2 pounds boneless skinless chicken breasts/thighs or use shredded rotisserie chicken
  • 2 tablespoons Cajun seasoning store-bought or homemade
  • 1 tablespoon butter for sautéing vegetables
  • 1 medium onion use yellow or sweet onion
  • 2 stalks celery diced
  • 1 large bell pepper any color
  • 1 medium jalapeño regulate based on spice preference
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 4 cups chicken broth low-sodium preferred
  • 15 ounces white beans or kidney beans
  • 1 cup salsa verde
  • 1 cup sour cream/crema/heavy cream/cream cheese based on dietary preferences
  • 1/2 cup grated Parmesan
  • 1 tablespoon lime juice optional but recommended
  • 1/4 cup cilantro/parsley for garnish
  • 2 stalks green onions optional for garnish
  • to taste salt

Method
 

Step‑by‑Step Instructions
  1. In a large pot, heat a tablespoon of oil over medium heat. Add the sliced smoked poultry sausage and cook for 5-7 minutes until golden brown. Remove and set aside.
  2. In the same pot, add the seasoned chicken breasts or thighs and cook for 5-7 minutes until browned on all sides. Set aside once done.
  3. Add a tablespoon of butter to the pot. Toss in diced onion, celery, bell pepper, and jalapeño. Sauté for 7-10 minutes until tender.
  4. Stir in minced garlic, ground cumin, and additional Cajun seasoning into the vegetables. Cook for another minute.
  5. Pour in chicken broth and add white beans, salsa verde, browned sausage, and chicken. Stir, bring to a boil, then simmer for 15 minutes.
  6. Remove chicken, shred into bite-sized pieces, and return to the pot.
  7. Stir in sour cream and grated Parmesan cheese, cooking for an additional 2-3 minutes.
  8. Add lime juice, cilantro, and green onions. Season with salt and pepper to taste.
