Ingredients
  

For the Batter
  • 1 cup Unsalted Butter softened
  • 1 cup Brown Sugar packed
  • 1/2 cup Granulated Sugar
  • 3 large Eggs
  • 1 tsp Vanilla Extract can substitute with almond extract
  • 2 cups All-Purpose Flour measure properly to avoid density
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Dried Cranberries, chopped can swap with dried cherries or raisins
  • 1/2 cup White Chocolate Chips can substitute with dark or milk chocolate chips
For the Frosting
  • 1/2 cup Cream Cheese softened
  • 1 cup Powdered Sugar
  • 1 tbsp Orange Zest
  • 2 tbsp Orange Juice
For Optional Drizzle
  • Extra White Chocolate for Drizzling Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan and line it with parchment paper.
  2. In a large bowl, combine unsalted butter, brown sugar, and granulated sugar. Beat on medium speed for 3-5 minutes until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until just combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the creamed butter mixture while mixing on low speed until just incorporated.
  6. Gently fold in dried cranberries and white chocolate chips.
  7. Transfer the batter to the prepared baking pan and spread it evenly.
  8. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  9. In a medium bowl, combine cream cheese and powdered sugar until smooth. Mix in orange zest and juice.
  10. Let the bars cool for about 15 minutes, then cool completely on a wire rack before frosting.
  11. If desired, melt extra white chocolate for drizzling over frosted bars. Cut into squares and serve.
