  • 100 grams Unsalted Butter Melted.
For the Filling
  • 400 grams Cream Cheese At room temperature.
  • 150 grams Brown Sugar
  • 100 grams Granulated Sugar
  • 200 grams Sour Cream At room temperature.
  • 1 teaspoon Vanilla Extract Don’t skip this ingredient!
  • 1 pinch Salt To balance sweetness.
  • 3 Eggs At room temperature.
  • 200 grams Biscoff Cookie Butter Can substitute with peanut butter or Nutella.
For Topping
  • 50 grams Crumble Biscoff Cookies

Method
 

Preparation Steps
  1. Prepare the cream cheese, eggs, and sour cream at room temperature for 30 to 60 minutes.
  2. Preheat the oven to 325°F (163°C). Crush Biscoff cookies into fine crumbs and mix with melted butter.
  3. Press the mixture into the bottom of a greased 9-inch springform pan. Bake for 8-10 minutes.
  4. In a bowl, beat cream cheese until smooth. Add sugars, sour cream, vanilla, and salt until combined.
  5. Add eggs one by one on low speed, mixing gently after each addition.
  6. Warm the cookie butter and fold gently into the mixture for swirls.
  7. Pour the filling into the cooled crust, swirl with remaining cookie butter, and bake for 60-65 minutes.
  8. Cool the cheesecake slowly in the oven with the door cracked for about 1 hour.
  9. Refrigerate for at least 6 hours or overnight before serving.
