Method
 

Step‑by‑Step Instructions
  1. In a large skillet, heat a splash of oil over medium-high heat. Add the crumbled Italian sausage and cook until browned, about 5-7 minutes. Drain excess fat and set aside.
  2. Transfer the cooked sausage to the slow cooker and pour in the spaghetti sauce and Italian diced tomatoes. Stir well until combined.
  3. Cover the slow cooker and set to low. Cook undisturbed for 6-8 hours.
  4. Stir in the tortellini into the sauce. Cover and cook for an additional 15-20 minutes.
  5. Once the tortellini is tender, sprinkle mozzarella and cheddar cheese evenly over the top. Cover and let it melt for 15-25 minutes.
  6. Ladle portions into bowls and garnish with fresh basil, Parmesan cheese, or crushed red pepper flakes if desired.
