Method
 

Step-by-Step Instructions
  1. Wash baby potatoes thoroughly and slice each in half. Boil in salted water for 15-20 minutes until fork-tender.
  2. Drain boiled potatoes and place in a bowl of cold water to cool.
  3. Scoop out the insides of each potato half, leaving a thin layer.
  4. Mix scooped potato flesh with mayonnaise, mustard, pickle juice, garlic powder, onion powder, and pepper until smooth.
  5. Fill each potato skin with the creamy mixture, heaping it slightly above the edges.
  6. Garnish with paprika and green onions. Chill for at least 30 minutes before serving.
