Goat Cheese Mixtures
  • 8 oz Goat cheese softened
  • 2 tbsp Lemon juice freshly squeezed
  • 2 tbsp Fresh thyme chopped

  • 1 sheet Puff pastry thawed
  • 2 tbsp Honey for drizzling
Salads
  • 4 cups Mixed greens
  • 1 cup Berries (strawberries and blueberries) sliced strawberries, whole blueberries
  • 1/2 cup Nuts (walnuts or pistachios) chopped

Method
 

Preparation
  1. Wash and dry fresh greens and berries. Chop mixed greens, slice strawberries, and toss blueberries in a bowl. Set goat cheese aside to soften.
  2. In a mixing bowl, combine softened goat cheese with lemon juice and thyme. Mix until smooth and creamy, about 3-4 minutes.
  3. In a large serving bowl, combine mixed greens, strawberries, and blueberries. Drizzle dressing and add goat cheese mixture. Toss gently.
  4. Preheat oven to 400°F (200°C). Roll out puff pastry and cut into squares. Spoon goat cheese mixture onto each square, fold and pinch edges.
  5. Arrange pastries on a baking sheet and drizzle honey on top. Bake for 15-20 minutes until golden brown.
  6. Let pastries cool, then serve with salad. Garnish with thyme or honey if desired.
