  1. Begin by cubing the extra-firm tofu into bite-sized pieces. In a mixing bowl, soak the tofu cubes in hot water for 10 minutes, along with smashed garlic cloves, kosher salt, dried oregano, and crushed red pepper flakes.
  2. In a separate mixing bowl, combine cornstarch, onion powder, and smoked paprika to create a dry coating mixture. Coat the drained tofu cubes evenly with this mixture, shaking off any excess.
  3. Heat extra-virgin olive oil in a large skillet over medium-high heat until shimmering, about 2-3 minutes. Carefully add the coated tofu cubes and fry them for 5-7 minutes, turning occasionally, until golden brown and crisp.
  4. In the same skillet, reduce the heat to medium and melt unsalted butter. Add minced garlic and sauté for 1-2 minutes until fragrant, then stir in the tomato paste and heavy cream, cooking for about 5 minutes until thickened.
  5. Fold the fried tofu into the creamy garlic tomato sauce, along with the oil-packed sun-dried tomatoes. Stir gently and allow to heat through for an additional 2-3 minutes.
