Preparation Steps
- Gather all your ingredients, including corn, mayonnaise, sour cream, Cotija cheese, chili powder, lime juice, and cilantro.
- If using fresh corn, grill or boil it until tender and slightly charred, about 8-10 minutes. For frozen corn, sauté in a skillet over medium heat for 5-7 minutes.
- In a large mixing bowl, combine mayonnaise, sour cream, crumbled Cotija cheese, chili powder, and lime juice. Whisk until smooth.
- Add the prepared corn to the creamy dressing and stir gently to coat all the corn evenly.
- Taste the esquites and adjust seasoning; add more chili powder or lime juice if desired.
