Step-by-Step Instructions
  1. Melt 4 tablespoons of butter over medium heat in a large pot. Add fresh sage leaves and cook until crispy, about 1–2 minutes.
  2. Add 12 ounces of Italian sausage, crumbling it with a wooden spoon. Cook until browned, about 5–7 minutes.
  3. Add 1 cup of pumpkin puree and 3 cups of broth. Simmer gently for 2–3 minutes.
  4. Stir in 12 ounces of short pasta, reduce heat to medium-low, and cook for 10–12 minutes until al dente.
  5. If the sauce is too thick, stir in 1/4 cup of broth or cream until desired consistency is reached.
  6. Serve hot, topped with grated Parmesan cheese and additional crispy sage leaves.
