Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine oats, flour, brown sugar, baking soda, and a pinch of salt.
  3. Melt butter in a microwave-safe bowl for about 30 seconds; pour it into your dry mixture.
  4. Whisk together an egg or flax mixture; add to the mixture along with vanilla extract, and stir well.
  5. Fold in the chocolate chips gently to ensure even distribution.
  6. Scoop rounded tablespoons of dough onto prepared baking sheet, spacing them a couple of inches apart.
  7. Bake for 10-12 minutes until edges are golden; cool on baking sheet for about 5 minutes.
  8. Transfer cookies to a wire rack and let them cool completely.
