  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder consider fresh minced garlic for more flavor

  • 1 cup Shredded Cheddar Cheese substitute with Monterey Jack or Pepper Jack for spice
  • 1 cup Corn or replace with black beans for an alternative

  • 8 pieces Flour or Corn Tortillas corn tortillas are gluten-free

Preparation Steps
  1. In a large mixing bowl, combine the shredded cooked chicken, onion powder, garlic powder, kosher salt, shredded cheddar cheese, and corn. Mix together until all ingredients are evenly distributed.
  2. Grab your tortillas and lay them flat on a clean surface. Spoon approximately ½ cup of the creamy pulled chicken filling onto each tortilla. Roll the tortilla tightly around the filling, tucking in the sides.
  3. In a deep skillet, pour enough oil to reach about 1 inch deep and place it over medium-low heat. Allow the oil to heat until shimmering and about 350°F (175°C).
  4. Carefully place the assembled taquitos seam-side down into the hot oil, frying for about 2-3 minutes on each side until golden brown and crispy.
  5. Remove the taquitos and place them on a towel-lined plate to drain excess oil. Allow cooling for about 5 minutes before serving.
  6. Serve your taquitos with toppings like fresh cilantro, lime wedges, and diced avocado.
