Ingredients

  • 2 cups Dry Macaroni Noodles any short pasta can be substituted

  • 1 cup Deli Corned Beef can substitute with turkey or veggie alternative
For the Creaminess
  • 1 cup Cubed Swiss Cheese provolone or cheddar can be substituted
  • 1/2 cup Mayonnaise light mayo or Greek yogurt can be used for a healthier option
For the Flavor
  • 1/2 cup Thousand Island Dressing Russian dressing can be used as an alternative
  • 1 tablespoon Dijon or Stone Ground Mustard yellow mustard can also be used
For the Tangy Twist
  • 1 cup Sauerkraut should be drained well
  • 2 tablespoons Sauerkraut Brine optional
For Crunch and Brightness
  • 1/2 cup Dill Pickles can substitute with sweet pickles
To Taste
  • 1 teaspoon Salt adjust to your liking
  • 1 teaspoon Pepper adjust to your liking

Method
 

Cooking and Mixing
  1. Cook the pasta in a large pot of salted boiling water according to package instructions (8-10 minutes). Drain, rinse, and cool.
  2. In a large bowl, combine the pasta, corned beef, Swiss cheese, sauerkraut, and dill pickles. Mix gently.
  3. In another bowl, whisk together the Thousand Island dressing, mayonnaise, mustard, and optional sauerkraut brine until smooth.
  4. Pour the dressing over the pasta mixture and gently fold to combine.
  5. Season with salt and pepper. Adjust to taste.
  6. Cover and chill in the refrigerator for at least 1 hour before serving.
