- Cook the pasta in a large pot of salted boiling water according to package instructions (8-10 minutes). Drain, rinse, and cool.
- In a large bowl, combine the pasta, corned beef, Swiss cheese, sauerkraut, and dill pickles. Mix gently.
- In another bowl, whisk together the Thousand Island dressing, mayonnaise, mustard, and optional sauerkraut brine until smooth.
- Pour the dressing over the pasta mixture and gently fold to combine.
- Season with salt and pepper. Adjust to taste.
