For the Pasta
  • 8 oz Gluten-free pasta Choose your favorite type
For the Creamy Sauce
  • 1 pkg Silken tofu Creates a creamy texture
  • 1 tbsp Olive oil Extra virgin for best flavor
  • 1 small Onion Diced
  • 3 cloves Garlic Minced
  • 4 oz Fresh spinach Easily swapped for kale or Swiss chard
  • 2 tbsp Nutritional yeast Imparts a cheesy flavor
  • 1 tbsp Lemon juice Can substitute with vinegar
  • 1/2 tsp Red pepper flakes Adjust to heat preference
  • to taste Salt For flavor enhancement
  • to taste Black pepper For flavor enhancement

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add gluten-free pasta and cook until al dente, approximately 8-10 minutes. Reserve ½ cup of pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat. Add diced onion and sauté for about 4 minutes until soft and translucent.
  3. Incorporate minced garlic and red pepper flakes, cooking for another 1-2 minutes until fragrant.
  4. Add fresh spinach to the skillet and gently stir until wilted, about 2-3 minutes.
  5. Transfer the sautéed mixture to a blender, adding silken tofu, nutritional yeast, lemon juice, salt, black pepper, and ¼ cup reserved pasta water. Blend until smooth.
  6. Return the creamy sauce to the skillet, adding the drained pasta. Toss to coat and simmer for 2-3 minutes, adding more pasta water as needed to reach desired consistency.
  7. Serve hot, garnished with fresh basil and nutritional yeast or olive oil.

Notes

Use silken tofu for the creamiest texture; firm tofu won't blend as smoothly. The sauce can be stored separately from the pasta to maintain texture.
