Step-by-Step Instructions for Street Corn Pasta Salad
  1. Cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Heat a skillet over medium-high heat and add olive oil. Sauté fresh corn for 5-7 minutes until tender and slightly charred.
  3. In a large bowl, blend mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper until smooth.
  4. Once cooled, combine pasta, charred corn, red onion, cilantro, jalapeño, and cheese in the bowl with dressing. Mix gently.
