Step-by-Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add diced onion, minced garlic, and grated ginger. Sauté for about 3-4 minutes until the onion is translucent.
  2. Pour in 4 cups of vegetable or chicken broth and 1 can of coconut milk. Stir well and bring to a gentle simmer.
  3. Stir in 2 tablespoons of red curry paste, 2 tablespoons of soy sauce, and the juice of 1 lime. Let it cook for about 5 minutes.
  4. Add 12-16 dumplings to the pot and cook according to the package instructions, usually around 5-7 minutes.
  5. Stir in 2 cups of fresh spinach or chopped bok choy until wilted, about 2-3 minutes.
  6. Taste the soup and adjust seasoning if necessary. Ladle into bowls and garnish with fresh cilantro.
  7. Serve with lime wedges on the side for added flavor.
