- Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it with olive oil or cooking spray.
- In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 minced garlic cloves and 1 finely chopped shallot; sauté for 3-4 minutes until fragrant and soft.
- Add 1 can (15 oz) of drained butter beans and 1 cup of vegetable broth to the skillet. Stir gently and let simmer for about 5 minutes.
