Step-by-Step Instructions
  1. Start by patting the cod fillets dry with paper towels and season both sides with salt and black pepper.
  2. Arrange three shallow dishes with flour, beaten eggs, and panko breadcrumbs for dredging.
  3. Dip cod fillet in flour, then eggs, and finally coat in panko breadcrumbs.
  4. Heat about ½ inch of neutral oil in a large skillet and fry the coated cod fillets for 3-4 minutes on each side until golden brown.
  5. Toast the sandwich buns cut-side up in a preheated oven at 350°F for 3-5 minutes.
  6. Assemble the sandwich with tartar sauce, lettuce, crispy cod fillet, and top with the other half of the bun.
