Cheese Preparation
- In a mixing bowl, combine crumbled feta cheese and grated kefalograviera. Stir until evenly mixed, adding freshly cracked pepper to taste.
Phyllo Layering
- Lay a defrosted phyllo sheet flat and brush a thin layer of olive oil. Sprinkle cheese mixture over one half, then layer another phyllo sheet and repeat until three layers are built.
Rolling
- Position the layered phyllo with the longest edge facing you. Roll tightly into a log shape, tucking in the ends.
Freezing
- Wrap the rolled phyllo log in plastic wrap and freeze for at least one hour.
Baking
- Preheat the oven to 350°F (175°C). Let the frozen log sit for 10 minutes, slice into 1-inch pieces, and bake for 20-30 minutes until golden brown.
Serving
- Allow to cool slightly on the pan before serving warm or at room temperature.
