Ingredients
  

For the Cheese Filling
  • 1 cup Feta Cheese crumbled, can substitute with cow feta
  • 1/2 cup Kefalograviera Cheese grated, can substitute with pecorino or other hard cheese
  • to taste Pepper freshly cracked
For the Phyllo Preparation
  • 8 sheets Phyllo Sheets defrosted
  • 1/2 cup Olive Oil for brushing

Method
 

Cheese Preparation
  1. In a mixing bowl, combine crumbled feta cheese and grated kefalograviera. Stir until evenly mixed, adding freshly cracked pepper to taste.
Phyllo Layering
  1. Lay a defrosted phyllo sheet flat and brush a thin layer of olive oil. Sprinkle cheese mixture over one half, then layer another phyllo sheet and repeat until three layers are built.
Rolling
  1. Position the layered phyllo with the longest edge facing you. Roll tightly into a log shape, tucking in the ends.
Freezing
  1. Wrap the rolled phyllo log in plastic wrap and freeze for at least one hour.
Baking
  1. Preheat the oven to 350°F (175°C). Let the frozen log sit for 10 minutes, slice into 1-inch pieces, and bake for 20-30 minutes until golden brown.
Serving
  1. Allow to cool slightly on the pan before serving warm or at room temperature.
