- In a large mixing bowl, combine chopped baby spinach, sliced spring onions, parsley, dried oregano, and dried thyme. Crumble in Greek feta and add black pepper and sea salt. Mix well and set aside.
- In a flat bowl, whisk together eggs, a splash of water, sea salt, and black pepper until smooth.
- Take a sheet of rice paper and dip it into the egg wash. Lay three sheets overlapping on your work surface. Sprinkle Parmesan cheese down the center, then add the spinach filling. Roll like a log and coil into a spiral. Sprinkle sesame seeds on top.
- Preheat the air fryer to 220°C (425°F). Cook spirals for 12-15 minutes until golden brown and crisp, rotating halfway through.
- Remove from air fryer and drizzle with fresh lemon juice. Serve warm with tzatziki for dipping.
