Step-by-Step Instructions
  1. Prepare the ingredients by dicing the onion and mincing the garlic. Rinse and drain the white beans, and chop the green chiles.
  2. Season the chicken breasts generously with salt, pepper, cumin, and chili powder. Optionally, sear the chicken in a skillet for 3-4 minutes per side to enhance flavor.
  3. Combine ingredients in the Crockpot by placing the chicken at the bottom, followed by onions, garlic, green chiles, chicken broth, and white beans.
  4. Set the slow cooker to LOW for 6-8 hours or HIGH for 3-4 hours. Do not lift the lid during cooking.
  5. Check for doneness; chicken should shred easily and beans should be soft. This indicates flavor melding is complete.
  6. Shred the chicken in the Crockpot, mixing it with the chili. Adjust seasoning to taste.
