  • 2 pieces Gala apples cored and diced
  • 1/2 cup walnuts chopped
  • 1 large carrot peeled and shredded
  • 1/3 cup golden raisins
  • 1/4 cup red onion thinly sliced
For the Dressing
  • 1/2 cup Greek yogurt can use non-fat
  • 1/4 cup mayonnaise light version can be used
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey adjust to taste
  • 1 pinch salt adjust to personal preference

Step-by-Step Instructions
  1. In a medium bowl, whisk together Greek yogurt, mayonnaise, apple cider vinegar, honey, and salt until smooth. Cover and chill in the refrigerator for at least 15 minutes.
  2. Chop the broccoli florets into bite-sized pieces, core and dice the apples, and shred the carrot.
  3. In a large mixing bowl, combine the broccoli, apples, walnuts, carrots, golden raisins, and red onion. Toss gently until evenly distributed.
  4. Pour the chilled dressing over the salad mixture and gently mix until every piece is coated.
  5. Cover the salad and let it chill in the refrigerator for an additional 10-15 minutes before serving.
