  • 2 cups Cabbage (coleslaw mix) A mix of red and green cabbage can be used for color.
  • 1 large Apple (Honey Crisp or Granny Smith) Thinly sliced for best integration.
  • 1 cup Roasted Walnuts Chop roughly after roasting at 350°F for 10 minutes.
For the Dressing
  • 1/4 cup Mustard (Dijon) Yellow mustard can be substituted.
  • 1/4 cup Onion (minced) Red onion can be used for a milder taste.
  • 1/2 cup Oil & Vinegar Use a neutral oil like canola or olive oil.
  • 2 tablespoons Sugar
Optional For Garnish
  • 1/4 cup Parmesan Cheese Can be omitted for a vegan version; nutritional yeast is a substitute.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Spread the walnuts evenly on a baking sheet and roast them for about 10 minutes until fragrant and slightly golden.
  2. In a large mixing bowl, whisk together the Dijon mustard, neutral oil, vinegar, and sugar until well emulsified. Fold in the minced onion and season with salt and pepper.
  3. Rinse the fresh brussel sprouts and trim hard stems. Shred the brussel sprouts finely using a food processor or mandolin. Combine with coleslaw mix and thinly sliced apple.
  4. Allow the slaw to marinate for 15-20 minutes to meld flavors and soften the vegetables.
  5. Transfer the slaw to a serving dish, topping with chopped walnuts and grated parmesan or nutritional yeast if desired. Serve chilled or at room temperature.
