Preparation Steps
- Preheat your oven to 350°F (175°C). Spread the walnuts evenly on a baking sheet and roast them for about 10 minutes until fragrant and slightly golden.
- In a large mixing bowl, whisk together the Dijon mustard, neutral oil, vinegar, and sugar until well emulsified. Fold in the minced onion and season with salt and pepper.
- Rinse the fresh brussel sprouts and trim hard stems. Shred the brussel sprouts finely using a food processor or mandolin. Combine with coleslaw mix and thinly sliced apple.
- Allow the slaw to marinate for 15-20 minutes to meld flavors and soften the vegetables.
- Transfer the slaw to a serving dish, topping with chopped walnuts and grated parmesan or nutritional yeast if desired. Serve chilled or at room temperature.
