Method
 

Making the Cheesecake
  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine graham cracker crumbs with melted unsalted butter and press into the bottom of the pan. Bake for 10 minutes and let cool.
  3. Beat softened cream cheese until smooth, gradually adding sugar, sour cream, maple syrup, and chai spice blend.
  4. Lower the mixer speed, add eggs one at a time, mixing just until combined.
  5. Pour the filling into the crust and bake for 55-60 minutes until edges are set and center jiggles slightly.
  6. Turn off the oven, leave the cheesecake inside with the door ajar for an hour, then refrigerate for at least four hours.
