Making the Cheesecake
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine graham cracker crumbs with melted unsalted butter and press into the bottom of the pan. Bake for 10 minutes and let cool.
- Beat softened cream cheese until smooth, gradually adding sugar, sour cream, maple syrup, and chai spice blend.
- Lower the mixer speed, add eggs one at a time, mixing just until combined.
- Pour the filling into the crust and bake for 55-60 minutes until edges are set and center jiggles slightly.
- Turn off the oven, leave the cheesecake inside with the door ajar for an hour, then refrigerate for at least four hours.
