- In a dry skillet, roast 1 cup of cashews over medium-low heat for 2-3 minutes, stirring constantly until they’re golden and fragrant. Add 2 tablespoons of sesame seeds and continue roasting for about 1 minute.
- Remove from heat and mix in ½ cup of desiccated coconut, letting it cool for a few minutes. Transfer to a food processor and pulse into a fine powder.
- Roughly chop 1 cup of seedless dried apricots. This helps in blending them more easily.
- Combine the chopped apricots with the powdered nut and coconut mixture in a food processor. Pulse until well combined and clumping together.
- Transfer to a bowl and fold in 2 tablespoons of honey (or maple syrup) and a pinch of cinnamon or splash of vanilla extract. Mix to form a dough-like consistency.
- Roll tablespoons of the mixture into smooth balls, about 1 inch in diameter. Roll in extra desiccated coconut if desired.
- Place in an airtight container and refrigerate for up to one month. Enjoy chilled or as a snack!
