Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mash the cooked green lentils in a mixing bowl until mostly smooth.
- Combine mashed lentils with breadcrumbs, onion, garlic, parsley, dill, oregano, cumin, olive oil, salt, pepper, and the egg. Mix gently.
- Wet your hands and shape the lentil mixture into meatballs about 1 to 1.5 inches in diameter and place on the baking sheet.
- Bake the meatballs for 20–25 minutes, flipping them halfway through.
- In a bowl, whisk together Greek yogurt, grated cucumber, garlic, lemon juice, and salt for the tzatziki.
- Chill the tzatziki in the refrigerator for at least 20 minutes.
- Serve the warm meatballs with tzatziki, lemon wedges, and cucumber slices.
