Preparation
- Preheat your oven to 400°F (200°C) to ensure that it's hot and ready for the Chicken Spinach Flatbread.
- Prepare all your ingredients: cut chicken breasts into bite-sized cubes, dice half an onion, mince a couple of garlic cloves, and shred the mozzarella cheese.
- In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the diced onions and sauté for about 2-3 minutes until they start to soften.
- Add the minced garlic and stir for another 30 seconds, allowing the fragrant aroma to fill your kitchen.
- Add the spinach to the skillet in batches, stirring until it begins to wilt, about 3-4 minutes. Season with salt, black pepper, and red pepper flakes.
- Increase the heat to high and add the cubed chicken. Cook for about 5-7 minutes, stirring frequently until the chicken is golden brown.
- While cooking the chicken, place flatbreads on a baking sheet and moisten both sides with water. Pre-bake flatbreads in the oven for 3 minutes.
- Remove flatbreads from the oven and distribute the spinach mixture evenly over each one. Top with sautéed chicken, mozzarella, and Parmesan cheese.
- Return topped flatbreads to the oven and bake for an additional 5-6 minutes until the cheese is melted and golden.
- Allow the flatbreads to cool for about 1-2 minutes, then garnish with freshly chopped parsley and serve warm.
