Flatbread Base
  • 4 pieces Flatbread Any preferred flatbread or pre-made crust
Chicken & Veggies
  • 2 cups Chicken breasts Cubed; rotisserie chicken works as a time-saving option
  • 2 cups Spinach Fresh or thawed frozen, well-drained
  • 1/2 cup Onion Diced; substitute with shallots for milder taste
  • 2 cloves Garlic Minced
Cheesy Topping
  • 1 cup Mozzarella cheese Freshly shredded
  • 1/4 cup Parmesan cheese Freshly grated
Cooking & Seasoning
  • 1 tablespoon Olive oil Extra virgin preferred
  • to taste Salt
  • to taste Black pepper Freshly ground
  • 1/4 teaspoon Red pepper flakes Optional
Garnish
  • 1/4 cup Fresh parsley Chopped; basil or cilantro can be alternatives

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to ensure that it's hot and ready for the Chicken Spinach Flatbread.
  2. Prepare all your ingredients: cut chicken breasts into bite-sized cubes, dice half an onion, mince a couple of garlic cloves, and shred the mozzarella cheese.
  3. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the diced onions and sauté for about 2-3 minutes until they start to soften.
  4. Add the minced garlic and stir for another 30 seconds, allowing the fragrant aroma to fill your kitchen.
  5. Add the spinach to the skillet in batches, stirring until it begins to wilt, about 3-4 minutes. Season with salt, black pepper, and red pepper flakes.
  6. Increase the heat to high and add the cubed chicken. Cook for about 5-7 minutes, stirring frequently until the chicken is golden brown.
  7. While cooking the chicken, place flatbreads on a baking sheet and moisten both sides with water. Pre-bake flatbreads in the oven for 3 minutes.
  8. Remove flatbreads from the oven and distribute the spinach mixture evenly over each one. Top with sautéed chicken, mozzarella, and Parmesan cheese.
  9. Return topped flatbreads to the oven and bake for an additional 5-6 minutes until the cheese is melted and golden.
  10. Allow the flatbreads to cool for about 1-2 minutes, then garnish with freshly chopped parsley and serve warm.
