Ingredients

For the Beef
  • 1 pound Flank Steak Substitutes include skirt steak or chuck marinated with baking soda for tenderness.
  • 2 tablespoons Cornstarch Helps tenderize the meat and thickens the sauce.
  • 1/2 teaspoon Baking Soda Optional for tenderizing tougher cuts.
For the Sauce
  • 1/4 cup Soy Sauce Tamari can be used for a gluten-free option.
  • 2 tablespoons Dark Soy Sauce Can substitute with regular soy sauce plus a little sugar.
  • 1/2 cup Chicken Stock Homemade stock enhances flavor.
  • 2 tablespoons Shaoxing Wine Can substitute with white wine or omit.
  • 1 tablespoon Brown Sugar Coconut sugar is a healthier alternative.
For the Vegetables
  • 4 cups Broccoli Feel free to substitute with carrots or snap peas.
  • 3 cloves Garlic Minced.
  • 1 tablespoon Ginger Minced; ground ginger can be used as a substitute.
For Cooking
  • 2 tablespoons Peanut Oil Ideal for sautéing due to high smoke point.

Equipment

  • large nonstick skillet
  • steamer basket
  • Medium Bowl

Method

Cooking Steps
  1. Start by slicing your flank steak against the grain into thin strips for optimum tenderness. Marinate the beef with soy sauce, peanut oil, and cornstarch for 15 minutes.
  2. While the beef marinates, whisk together all sauce ingredients in a bowl until the sugar dissolves completely.
  3. In a nonstick skillet, heat water over medium-high heat. Steam the broccoli florets for 3-4 minutes until just tender and bright green.
  4. Remove the steamed broccoli and set aside. Add peanut oil to the skillet, then the marinated beef in a single layer. Sear for 2-3 minutes until browned.
  5. Stir in minced garlic and ginger, sautéing for 30 seconds until fragrant.
  6. Return the steamed broccoli to the skillet and pour the prepared sauce over the mixture, stirring gently for 1 minute until thickened.
  7. Transfer to a serving dish and serve hot over a bed of steamed rice or noodles.
