Preparation Steps
- In a mixing bowl, combine coconut yogurt, cashew butter, maple syrup, and vanilla extract. Stir until the mixture is smooth and creamy.
- Gently fold in mini chocolate chips using a spatula. Set aside while you prepare your baking sheet.
- Line a baking sheet with parchment paper. Spoon generous dollops of the mixture onto the sheet, leaving space between each.
- Freeze for about 1 hour, or until the bites are completely solid.
- Melt chocolate chips and coconut oil. Stir until smooth and glossy.
- Dip each frozen bite into the melted chocolate, allowing excess to drip off. Return to the baking sheet.
- Freeze again for 30 minutes to harden the chocolate coating.
