Method
 

Preparation Steps
  1. In a mixing bowl, combine coconut yogurt, cashew butter, maple syrup, and vanilla extract. Stir until the mixture is smooth and creamy.
  2. Gently fold in mini chocolate chips using a spatula. Set aside while you prepare your baking sheet.
  3. Line a baking sheet with parchment paper. Spoon generous dollops of the mixture onto the sheet, leaving space between each.
  4. Freeze for about 1 hour, or until the bites are completely solid.
  5. Melt chocolate chips and coconut oil. Stir until smooth and glossy.
  6. Dip each frozen bite into the melted chocolate, allowing excess to drip off. Return to the baking sheet.
  7. Freeze again for 30 minutes to harden the chocolate coating.
