Preparation Steps
  1. Soak 1 cup of dried garbanzo beans in a large bowl with water and add 1 teaspoon of baking soda. Let sit overnight.
  2. In a food processor, combine fresh cilantro, mint, soaked chickpeas, garlic, salt, pepper, ground coriander, and ground cumin. Blend to a coarse mixture and refrigerate for at least 1 hour.
  3. Stir in 2 tablespoons of sesame seeds and 1 teaspoon of baking powder. Shape into 2-inch balls and flatten them into patties.
  4. Heat vegetable oil in a skillet to 375°F (190°C). Fry falafel for about 2 minutes on each side until golden brown. Transfer to paper towel to drain excess oil.
  5. Slice pita bread open, spread hummus inside, fill with falafel, and top with tomatoes, cucumbers, lettuce, and red onions. Drizzle with tzatziki and garnish with fresh dill.
