Preparation Steps
- Soak 1 cup of dried garbanzo beans in a large bowl with water and add 1 teaspoon of baking soda. Let sit overnight.
- In a food processor, combine fresh cilantro, mint, soaked chickpeas, garlic, salt, pepper, ground coriander, and ground cumin. Blend to a coarse mixture and refrigerate for at least 1 hour.
- Stir in 2 tablespoons of sesame seeds and 1 teaspoon of baking powder. Shape into 2-inch balls and flatten them into patties.
- Heat vegetable oil in a skillet to 375°F (190°C). Fry falafel for about 2 minutes on each side until golden brown. Transfer to paper towel to drain excess oil.
- Slice pita bread open, spread hummus inside, fill with falafel, and top with tomatoes, cucumbers, lettuce, and red onions. Drizzle with tzatziki and garnish with fresh dill.
