  • 1 tsp Baking Soda Essential for soft meatballs.
  • 1 cup Fresh Herbs (parsley, mint, coriander), chopped Any combination of fresh herbs works well.
  • 1 tbsp Olive Oil Avocado oil can be used as a substitute.

For the Roasted Potatoes
  • 6 medium Potatoes, cut into wedges Sweet potatoes can be used as an alternative.
  • 0.5 tsp Cumin
  • 0.5 tsp Paprika Smoked paprika is great for extra flavor.
  • 0.5 tsp Dried Oregano
For the Tzatziki Sauce
  • 1 cup Thick Greek Yogurt Consider non-dairy yogurt for dairy-free.
  • 0.5 Cucumber, grated Shredded zucchini can be used as substitution.
  • 1 clove Garlic, minced Omit for a milder sauce.
  • 1 tbsp Lemon Juice Fresh lemon juice is preferable.
  • 0.3 cup Dill or Mint, chopped Adjust according to taste.
For the Fresh Salad
  • 2 cups Crisp Lettuce Leaves, chopped Spinach can also be used.
  • 2 medium Tomatoes, chopped Heirloom tomatoes add sweetness.
  • 2 Cucumbers, chopped
  • 0.5 Red Onion, chopped Green onions can be milder.
  • 0.5 cup Kalamata Olives, pitted & halved Feta cheese can be added for tang.

Method
 

Instructions
  1. In a large mixing bowl, combine ground beef, minced garlic, minced onions, breadcrumbs, baking soda, chopped fresh herbs, olive oil, salt, and pepper. Mix thoroughly and refrigerate for at least 2 hours.
  2. Preheat your oven to 425°F (220°C). Roll the meat mixture into 1.5-inch meatballs and place on a baking sheet. Bake for 30-40 minutes until golden brown and cooked through.
  3. Cut the potatoes into wedges, toss with olive oil, salt, cumin, paprika, and oregano. Roast in the oven along with meatballs for about 40-60 minutes, turning halfway.
  4. In a medium bowl, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill or mint. Refrigerate for at least 30 minutes.
  5. Assemble the bowls with lettuce as the base, add roasted potatoes, baked meatballs, fresh salad ingredients, and drizzle with tzatziki sauce.
