For the Dressing
  • 1 cup plain Greek yogurt can use plant-based yogurt for a dairy-free version
  • 2 tablespoons Dijon mustard yellow mustard can be substituted if needed
  • 2 tablespoons apple cider vinegar white wine vinegar works well as an alternative
  • 1/4 cup pineapple juice fresh juice yields the best taste
For the Slaw
  • 4 cups coleslaw mix or shredded cabbage freshly shredded cabbage is recommended
  • 1 cup pineapple tidbits fresh pineapple is preferable for optimal flavor
  • 1/2 cup macadamia nuts coarsely chopped, can substitute with cashews or almonds if preferred

Method
 

Dressing Preparation
  1. In a medium mixing bowl, whisk together the Greek yogurt, Dijon mustard, apple cider vinegar, and pineapple juice until smooth and creamy. Season with salt and pepper. Set aside.
Vegetable Combination
  1. In a large mixing bowl, combine the coleslaw mix, pineapple tidbits, and macadamia nuts. Gently toss the ingredients.
Mixing Dressing and Slaw
  1. Pour the dressing over the slaw mixture and gently stir until well coated.
Chill and Serve
  1. Allow the coleslaw to chill in the refrigerator for at least 30 minutes before serving. Stir gently and enjoy.
