Method
 

Instructions
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Press into the bottom of the springform pan.
  3. Bake the crust for 10 minutes, then remove it to cool.
  4. Beat softened cream cheese until smooth. Gradually add granulated sugar, then pumpkin puree, eggs, vanilla extract, and spices. Mix until just combined.
  5. Pour the filling over the cooled crust and smooth the top.
  6. In another bowl, combine flour, oats, brown sugar, cinnamon, and softened butter. Sprinkle evenly over the filling.
  7. Bake for 40-45 minutes, until the edges are set but the center has a slight jiggle.
  8. Allow to cool for 15-20 minutes, then refrigerate for at least 3 hours or overnight.
