- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Press into the bottom of the springform pan.
- Bake the crust for 10 minutes, then remove it to cool.
- Beat softened cream cheese until smooth. Gradually add granulated sugar, then pumpkin puree, eggs, vanilla extract, and spices. Mix until just combined.
- Pour the filling over the cooled crust and smooth the top.
- In another bowl, combine flour, oats, brown sugar, cinnamon, and softened butter. Sprinkle evenly over the filling.
- Bake for 40-45 minutes, until the edges are set but the center has a slight jiggle.
- Allow to cool for 15-20 minutes, then refrigerate for at least 3 hours or overnight.
