- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with butter or cooking spray.
- Wash and trim your fresh rhubarb stalks, cutting them into small pieces, and spread evenly across the bottom of the greased baking dish.
- Sprinkle the strawberry gelatin and sugar generously over the rhubarb without mixing them together.
- Evenly pour the dry yellow cake mix over the top of the rhubarb and gelatin without stirring.
- In a separate bowl, whisk together melted butter, cold water, vanilla extract, and salt, then pour this mixture over the cake mix evenly.
- Bake in the preheated oven for 45 to 60 minutes until the top is golden brown.
- Remove from oven and let cool for 15 to 20 minutes before serving warm, topped with vanilla ice cream.
